Almond Crusted Chicken Tenders

Crispy and flavorful almond crusted chicken tenders, perfect for a healthy and satisfying meal or snack. Lightly baked to golden perfection with a crunchy almond coating.

  • 1 lb chicken tenders
  • 1 cup almond flour
  • 1/2 cup finely chopped almonds
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil or cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, whisk the eggs with garlic powder, paprika, salt, and pepper.
  3. In another bowl, combine almond flour and finely chopped almonds.
  4. Dip each chicken tender into the egg mixture, then coat thoroughly with the almond flour mixture.
  5. Place coated tenders on the prepared baking sheet and lightly drizzle olive oil over them or spray with cooking spray.
  6. Bake for 15-20 minutes, flipping halfway through, until chicken is cooked through and crust is golden brown.
  7. Remove from oven and let rest for a few minutes before serving.

Notes

For extra flavor, serve with a side of honey mustard or your favorite dipping sauce. You can also add some chili powder to the almond coating for a spicy kick.
