This Almond Medjool Date Tart is a naturally sweet and satisfying treat. With a chewy almond crust and a creamy date filling, it’s a healthier alternative to traditional desserts.

  • For the Crust:
  • 1 ½ cups almond flour
  • ¼ cup rolled oats
  • ¼ cup coconut oil, melted
  • 2 tablespoons maple syrup
  • ¼ teaspoon sea salt
  • For the Filling:
  • 1 cup Medjool dates, pitted
  • ½ cup almond butter
  • ¼ cup almond milk
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional: Sliced almonds for topping

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine almond flour, rolled oats, melted coconut oil, maple syrup, and salt. Mix until well combined.
  2. Press the mixture evenly into the bottom of an 8-inch tart pan.
  3. Bake for 12-15 minutes, or until lightly golden brown. Let cool completely.
  4. Make the Filling: In a food processor, combine Medjool dates, almond butter, almond milk, vanilla extract, and salt. Process until smooth and creamy.
  5. Pour the filling into the cooled crust, spreading evenly.
  6. If desired, sprinkle sliced almonds on top.
  7. Refrigerate for at least 1 hour to allow the filling to set before serving.

Notes

Serve chilled for the best flavor. A dollop of coconut cream or a sprinkle of cinnamon would also be delicious additions.
