  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup (1/2 stick) cold unsalted butter, cut into cubes

Instructions

  1. Make the Crust: In a large bowl, whisk together flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
  3. Prepare the Apple Butter Filling: In a medium bowl, whisk together apple butter, heavy cream, vanilla extract, cinnamon, and nutmeg until smooth.
  4. Make the Cinnamon Oat Topping: In a medium bowl, combine flour, oats, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Assemble the Pie: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer to a 9-inch pie plate. Trim and crimp the edges.
  6. Pour the apple butter filling into the prepared pie crust. Sprinkle the cinnamon oat topping evenly over the filling.
  7. Bake for 45-50 minutes, or until the crust is golden brown and the filling is set. If the topping starts to brown too quickly, tent the pie with foil.
  8. Let the pie cool completely before slicing and serving.
