This Apple Cider Cheesecake combines the creamy richness of cheesecake with the warm, comforting flavors of apple cider. It’s the perfect dessert for fall gatherings and cozy nights in.

  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • For the Filling:
  • 24 ounces cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 cup apple cider, reduced to 1/4 cup
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • For the Apple Cider Caramel Topping (Optional):
  • 1/2 cup apple cider
  • 1/4 cup granulated sugar
  • 1 tablespoon butter
  • Pinch of salt

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes. Let cool.
  2. Make the Filling: In a large bowl, beat cream cheese and sugar until smooth. Gradually add the reduced apple cider, mixing until combined. Beat in eggs one at a time, then stir in vanilla, cinnamon, and salt.
  3. Bake the Cheesecake: Pour filling over the cooled crust. Bake for 55-65 minutes, or until the edges are set and the center is slightly jiggly.
  4. Cool the Cheesecake: Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Then, remove from oven and let cool completely at room temperature. Cover and refrigerate for at least 4 hours, or preferably overnight.
  5. Make the Caramel Topping (Optional): In a small saucepan, combine apple cider and sugar. Bring to a boil over medium heat, stirring until sugar is dissolved. Continue to cook, without stirring, until mixture turns a golden amber color (about 8-10 minutes). Remove from heat and stir in butter and salt. Let cool slightly.
  6. Serve: Drizzle the apple cider caramel topping over the cheesecake before serving, if desired.

Notes

For a richer flavor, use brown butter in the crust. You can also garnish with sliced apples or a sprinkle of cinnamon before serving.
