This Asian Sesame Lettuce Salad is a light and refreshing dish, perfect for a quick lunch or a side salad. The sesame dressing adds a flavorful touch to crisp lettuce and colorful vegetables.

  • 1 head of lettuce (such as romaine or butter lettuce), washed and chopped
  • 1/2 cup shredded carrots
  • 1/4 cup chopped red cabbage
  • 1/4 cup chopped green onions
  • 2 tablespoons sesame seeds
  • 2 tablespoons sliced almonds
  • For the Dressing:
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), grated ginger, minced garlic, and red pepper flakes (if using).
  2. In a large bowl, combine chopped lettuce, shredded carrots, chopped red cabbage, and green onions.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Sprinkle with sesame seeds and sliced almonds.
  5. Serve immediately.

Notes

For an extra protein boost, add grilled chicken or tofu to the salad. You can also substitute different types of nuts or seeds for the almonds and sesame seeds.
