This Authentic Crockpot Chicken Pozole Verde is a comforting Mexican stew made with tender shredded chicken, hominy, and a tangy, vibrant green tomatillo salsa simmered to perfection in your slow cooker.

  • 2 lbs boneless, skinless chicken breasts
  • 1 (25 oz) can white hominy, drained and rinsed
  • 1 lb fresh tomatillos, husked and rinsed
  • 3 serrano peppers, stemmed and seeded (adjust to taste)
  • 1 medium white onion, quartered
  • 4 cloves garlic
  • 4 cups low-sodium chicken broth
  • 1 bunch fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • Lime wedges, for serving
  • Thinly sliced radishes, for garnish
  • Shredded cabbage or lettuce, for garnish
  • Chopped white onion, for garnish
  • Avocado slices, optional garnish

Instructions

  1. Preheat a skillet over medium heat and add olive oil. Lightly brown the chicken breasts on both sides for 3-4 minutes each; this enhances flavor.
  2. In a blender, combine tomatillos, serrano peppers, quartered onion, garlic, cilantro (reserve some for garnish), cumin, oregano, salt, and pepper. Blend until smooth.
  3. Place browned chicken breasts in the crockpot. Pour the blended green salsa over the chicken.
  4. Add the drained hominy and chicken broth to the crockpot. Stir to combine gently.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and easily shredded.
  6. Remove the chicken breasts and shred them with two forks. Return shredded chicken to the crockpot and stir well.
  7. Adjust seasoning with salt and pepper if needed. Let the stew cook an additional 15 minutes on low.
  8. Serve hot with lime wedges, sliced radishes, shredded cabbage or lettuce, chopped onion, and optional avocado slices for a fresh, crunchy contrast.

Notes

For an extra depth of flavor, toast the cumin and oregano in a dry skillet before adding to the blender. You can also substitute chicken thighs for juicier meat.
