Ingredients

  • 2 medium zucchini, spiralized
  • 1 ripe avocado
  • 1 cup fresh basil leaves
  • 2 garlic cloves
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchini into noodles and set aside.
  2. In a food processor, combine avocado, basil leaves, garlic, pine nuts, Parmesan cheese, and lemon juice.
  3. While processing, slowly drizzle in olive oil until the mixture is smooth and creamy.
  4. Season the pesto with salt and pepper to taste.
