Elevate your avocado toast with a perfectly poached egg and a sprinkle of flavorful dukkah. This simple yet satisfying breakfast or brunch is packed with healthy fats and protein.

Ingredients

  • 2 slices of your favorite bread
  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • Pinch of red pepper flakes
  • Salt and pepper to taste
  • 2 large eggs
  • 1 tablespoon white vinegar
  • 2 tablespoons dukkah
  • Optional: fresh cilantro or parsley, chopped

Instructions

  1. Toast the bread to your desired level of doneness.
  2. While the bread is toasting, prepare the avocado. In a small bowl, mash the avocado with lemon juice, red pepper flakes, salt, and pepper.
  3. Spread the mashed avocado evenly over the toasted bread.
  4. Poach the eggs: Fill a saucepan with about 3 inches of water and bring to a simmer. Add the white vinegar.
  5. Crack each egg into a small bowl. Gently swirl the simmering water to create a vortex.
  6. Carefully slide each egg into the swirling water. Cook for 3-4 minutes for a runny yolk, or longer for a firmer yolk.
  7. Remove the poached eggs with a slotted spoon and place them on a paper towel to drain excess water.
  8. Place one poached egg on top of each slice of avocado toast.
  9. Sprinkle with dukkah and fresh herbs (if using). Serve immediately.

Notes

For a richer flavor, try adding a drizzle of olive oil over the avocado before topping with the egg and dukkah. You can also experiment with different types of dukkah for varied flavor profiles.
