This Bacon Cornbread Stuffing is a savory and flavorful twist on a classic holiday side dish. Crispy bacon, sweet cornbread, and aromatic herbs combine to create a comforting and unforgettable stuffing.

  • 1 pound bacon, chopped
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried marjoram
  • 1 (14.75 ounce) can creamed corn
  • 1 (15 ounce) package cornbread stuffing mix
  • 1 (12 ounce) loaf day-old bread, cubed
  • 2 cups chicken broth
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, reserving 2 tablespoons of bacon grease in the skillet.
  3. Add onion and celery to the skillet and cook until softened, about 5-7 minutes. Stir in sage, thyme, and marjoram.
  4. In a large bowl, combine creamed corn, cornbread stuffing mix, cubed bread, cooked onion and celery mixture, and crumbled bacon.
  5. Pour chicken broth over the mixture and stir until evenly moistened. Add parsley, salt, and pepper, and mix well.
  6. Transfer stuffing to a greased 9×13 inch baking dish.
  7. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes, or until golden brown and heated through.
  8. Let stand for 10 minutes before serving.

Notes

For an extra layer of flavor, add sausage or mushrooms to the stuffing. You can also use vegetable broth instead of chicken broth for a vegetarian option.
