  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 tablespoons melted butter
  • 2 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, baking powder, and salt.
  3. Stir in milk and melted butter until a soft dough forms.
  4. In a separate bowl, mix shredded chicken, sour cream, green onions, garlic powder, black pepper, and half of the cheddar and mozzarella cheeses.
  5. Pour chicken broth and olive oil into a greased casserole dish.
  6. Drop spoonfuls of the dough over the broth to form dumplings.
  7. Spoon the chicken mixture evenly over the dumplings.
  8. Sprinkle the remaining cheddar and mozzarella cheese on top.
  9. Bake for 30–35 minutes, until the dumplings are cooked through and the cheese is golden and bubbly.
  10. Let cool for 5 minutes before serving.

Notes

For an extra creamy casserole, add a dollop of cream cheese into the chicken mixture or serve with a fresh green salad.
