  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 cups semisweet chocolate chips
  • 1 quart vanilla ice cream
  • Orange and black decorating gel or icing (for basketball lines)

Instructions

  1. Preheat oven to 325°F (165°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large bowl, mix melted butter, brown sugar, and granulated sugar until smooth. Beat in vanilla, egg, and egg yolk until light and creamy.
  4. Gradually mix in the flour mixture until just blended. Stir in chocolate chips.
  5. Drop dough by tablespoonfuls onto prepared baking sheets, spacing about 2 inches apart.
  6. Bake for 15-17 minutes or until edges are golden brown. Cool on wire racks.
  7. Once cookies are completely cooled, soften ice cream slightly and scoop a generous amount onto the bottom side of one cookie.
  8. Top with another cookie to form a sandwich. Gently press to flatten slightly.
  9. Use orange decorating gel to pipe basketball panel lines on the top cookie and black gel to outline the lines for a basketball effect.
  10. Freeze sandwiches for at least 1 hour before serving to firm up.

Notes

For extra fun, try using different ice cream flavors or add mini chocolate chips inside the ice cream for texture. Keep sandwiches frozen until ready to serve to prevent melting.
