Beef and Macaroni Soup

Hearty and comforting, Beef and Macaroni Soup combines tender beef, tender macaroni pasta, and flavorful vegetables in a rich broth perfect for a satisfying meal any day.

  • 1 lb ground beef
  • 1 cup elbow macaroni
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add ground beef to the pot, cook until browned, breaking it up with a spoon.
  3. Stir in diced carrots and celery; cook for 5 minutes until slightly tender.
  4. Add diced tomatoes, beef broth, oregano, basil, salt, and pepper. Bring to a boil.
  5. Add elbow macaroni and reduce heat to a simmer. Cook for 10-12 minutes until macaroni is tender.
  6. Adjust seasoning if needed, then remove from heat and serve hot.

Notes

For extra flavor, garnish with fresh parsley or a sprinkle of grated Parmesan cheese before serving.
