Luscious Berry Cheesecake Slice

This Berry Cheesecake recipe features a creamy, decadent filling swirled with fresh berry compote on a buttery graham cracker crust. It’s the perfect dessert for any special occasion or summer gathering.

  • 1 ½ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 3 (8 ounce) packages cream cheese, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press into the bottom of a 9-inch springform pan.
  3. Bake crust for 8-10 minutes, then let cool.
  4. In a large bowl, beat cream cheese and 1 ½ cups sugar until smooth and creamy.
  5. Beat in eggs one at a time, then stir in vanilla extract and sour cream.
  6. In a saucepan, combine mixed berries, ¼ cup sugar, and lemon juice. Cook over medium heat until berries soften and release their juices, about 5-7 minutes. Let cool slightly.
  7. Pour cheesecake batter over the cooled crust.
  8. Spoon berry compote over the batter and swirl gently with a knife.
  9. Bake for 55-65 minutes, or until the center is just set.
  10. Turn off the oven and let cheesecake cool in the oven with the door slightly ajar for 1 hour.
  11. Refrigerate for at least 4 hours, or preferably overnight, before serving.

Notes

Serve chilled with additional fresh berries and a dollop of whipped cream.
