  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 butternut squash (about 2 pounds), peeled, seeded, and cubed
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, avocado, lime wedges

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and red bell pepper and cook for another 2 minutes.
  2. Add the butternut squash, black beans, diced tomatoes (with their juice), vegetable broth, chili powder, cumin, and smoked paprika to the pot. Season with salt and pepper to taste.
  3. Bring the stew to a boil, then reduce heat and simmer for 20-25 minutes, or until the butternut squash is tender.
  4. Adjust seasonings as needed.
  5. Serve hot, garnished with your favorite toppings such as chopped cilantro, avocado, and a squeeze of lime juice.

Notes

For a spicier stew, add a pinch of cayenne pepper or a diced jalapeño along with the onion. This stew is also delicious served over rice or quinoa.
