Homemade Blueberry Pie Fresh From The Oven

This classic blueberry pie is bursting with juicy, sweet blueberries and a flaky, golden crust. A perfect dessert for any occasion, it’s best served warm with a scoop of vanilla ice cream.

  • 6 cups fresh blueberries
  • ¾ cup granulated sugar
  • ¼ cup cornstarch
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • 1 box (14.1 ounces) refrigerated pie crusts
  • 1 tablespoon butter, cut into small pieces
  • 1 tablespoon milk or cream
  • 1 tablespoon coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, gently mix blueberries, granulated sugar, cornstarch, lemon juice, lemon zest, cinnamon, and salt.
  3. Line a 9-inch pie plate with one of the pie crusts.
  4. Pour blueberry mixture into the pie crust. Dot with butter pieces.
  5. Top with the second pie crust. Crimp edges to seal. Cut slits in the top crust to vent steam.
  6. Brush the top crust with milk or cream and sprinkle with coarse sugar (if using).
  7. Bake for 45-55 minutes, or until crust is golden brown and filling is bubbly. If the crust browns too quickly, cover the edges with foil.
  8. Let cool completely before serving.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra special treat!
