  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 teaspoons fresh thyme leaves
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken breasts and cook for 5-6 minutes per side until golden and cooked through. Remove chicken and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute.
  5. Add the fresh blueberries, thyme leaves, chicken broth, and balsamic vinegar. Cook for 4-5 minutes, stirring occasionally, until the sauce thickens slightly.
  6. Return the chicken breasts to the skillet and spoon the blueberry thyme sauce over them.
  7. Cook for an additional 2 minutes to warm the chicken through and meld the flavors.
  8. Serve the chicken topped with the blueberry thyme sauce.

For an extra burst of flavor, garnish with a sprinkle of fresh thyme and serve alongside roasted vegetables or a light salad.
