  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1/2 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • Your favorite salsa, for serving

Instructions

  1. In a medium bowl, whisk together the eggs, milk, salt, and pepper.
  2. Melt the butter in a large skillet over medium heat.
  3. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are set but still slightly moist.
  4. Stir in the cooked sausage and cheddar cheese.
  5. Warm the tortillas according to package directions.
  6. Divide the egg mixture evenly among the tortillas.
  7. Fold in the sides of each tortilla and roll up tightly.
