A Delicious Broccoli Cheese Rice Casserole Ready to Serve

This comforting Broccoli Cheese Rice Casserole is a classic side dish or vegetarian main course. Creamy, cheesy, and packed with tender broccoli and fluffy rice, it’s perfect for a weeknight meal or potluck.

  • 1 cup uncooked long-grain rice
  • 2 cups water
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 4 cups broccoli florets, steamed
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup bread crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a saucepan, bring water to a boil. Add rice, reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and water is absorbed.
  3. While rice is cooking, melt 1 tablespoon of butter in a skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  4. In a large bowl, combine cooked rice, sautéed onion and garlic, cream of mushroom soup, milk, pepper, garlic powder, steamed broccoli, and 1 1/2 cups of cheddar cheese. Stir to combine.
  5. Pour mixture into a greased 9×13 inch baking dish.
  6. In a small bowl, combine bread crumbs and 2 tablespoons melted butter. Sprinkle over casserole.
  7. Top with remaining 1/2 cup of cheddar cheese.
  8. Bake for 20-25 minutes, or until golden brown and bubbly.
  9. Let stand for 5-10 minutes before serving.

Notes

For a richer flavor, use sharp cheddar cheese. You can also add cooked ham or bacon for extra protein.
