  • 1 (9-inch) pre-made graham cracker pie crust
  • 1 cup packed brown sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/4 cup heavy cream
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • Optional: Whipped cream and butterscotch chips for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium saucepan, combine brown sugar, butter, heavy cream, milk, vanilla extract, and salt. Cook over medium heat, stirring constantly, until butter is melted and sugar is dissolved.
  3. Remove from heat and let cool slightly for 5 minutes.
  4. In a small bowl, whisk the egg yolks. Slowly drizzle a small amount of the warm butterscotch mixture into the egg yolks, whisking constantly to temper them.
  5. Pour the tempered egg yolk mixture back into the saucepan with the remaining butterscotch mixture. Cook over low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon, about 2-3 minutes. Be careful not to boil.
  6. Pour the butterscotch filling into the graham cracker crust.
  7. Bake for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
  8. Let cool completely at room temperature, then refrigerate for at least 2 hours before serving.
  9. Garnish with whipped cream and butterscotch chips, if desired.

Notes

For an extra layer of flavor, sprinkle a pinch of sea salt on top of the pie after baking. You can also use a homemade pie crust if preferred.
