Cajun Chicken Pasta

Cajun Chicken Pasta is a flavorful and creamy dish featuring tender chicken seasoned with bold Cajun spices, tossed with pasta and a rich, spicy sauce perfect for a comforting dinner.

  • 8 oz penne pasta
  • 2 boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. Slice the chicken breasts into thin strips and toss with Cajun seasoning to coat evenly.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. In the same skillet, melt the butter. Add the sliced onion, bell pepper, and garlic; sauté until softened, about 4-5 minutes.
  5. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Reduce heat to medium-low and stir in the heavy cream and Parmesan cheese. Cook until the sauce thickens slightly, about 3-4 minutes.
  7. Return the cooked chicken to the skillet and toss to coat in the sauce.
  8. Add the cooked pasta to the skillet and stir everything together until well combined and heated through.
  9. Adjust seasoning with salt and pepper as needed.
  10. Serve garnished with chopped fresh parsley.

Notes

For extra heat, add a pinch of cayenne pepper or serve with crushed red pepper flakes. This dish pairs well with a crisp green salad or garlic bread.
