Cajun Potato Soup Bowl

Warm up with this creamy and flavorful Cajun Potato Soup. Packed with potatoes, vegetables, and a kick of Cajun spice, it’s the perfect comforting meal for a chilly day.

  • 4 slices bacon, diced
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 ½ pounds Yukon gold potatoes, peeled and cubed
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup heavy cream
  • ¼ cup chopped green onions, for garnish
  • Shredded cheddar cheese, for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, reserving 1 tablespoon of bacon grease in the pot.
  2. Add the onion and bell pepper to the pot and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  3. Pour in the chicken broth, add the potatoes, Cajun seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup to a regular blender in batches and blend until smooth.
  5. Stir in the heavy cream and heat through. Do not boil.
  6. Ladle the soup into bowls and garnish with cooked bacon, green onions, and shredded cheddar cheese (if using).
  7. Serve hot and enjoy!

Notes

For a spicier soup, add a pinch of cayenne pepper or use a spicier Cajun seasoning blend. You can also top with a dollop of sour cream or Greek yogurt for extra creaminess.
