  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • For the Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ½ cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add buttermilk, oil, eggs, and vanilla to the dry ingredients. Beat until well combined.
  4. Gradually add boiling water to the batter, mixing until smooth. The batter will be thin.
  5. Pour batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
  8. For the Frosting: In a large bowl, beat butter until creamy.
  9. Gradually add powdered sugar and cocoa powder, alternating with milk, until frosting reaches desired consistency.
  10. Stir in vanilla extract.
  11. Frost cooled cake layers and decorate as desired.

Notes

For an extra touch, sprinkle chocolate shavings or edible gold glitter on top of the frosting.
