  • 2 medium apples, peeled and diced (Granny Smith or Honeycrisp)
  • 2 tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • For the Cheesecake Filling:
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • For the Caramel Drizzle:
  • 1/2 cup caramel sauce, store-bought or homemade

Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9×13 inch baking pan lined with parchment paper.
  2. Bake the Crust: Bake for 8-10 minutes, or until lightly golden. Let cool slightly.
  3. Make the Apple Filling: In a large skillet, melt butter over medium heat. Add diced apples, sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until apples are tender, about 8-10 minutes. Stir in lemon juice and let cool slightly.
  4. Make the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined.
  5. Assemble the Bars: Pour cheesecake filling over the cooled graham cracker crust. Spread the apple filling evenly over the cheesecake layer.
  6. Bake the Bars: Bake for 30-35 minutes, or until the cheesecake is set around the edges but still slightly jiggly in the center.
  7. Cool and Chill: Let the bars cool completely in the pan, then cover and refrigerate for at least 3 hours before cutting.
  8. Drizzle with Caramel: Before serving, drizzle caramel sauce over the bars. Cut into squares and enjoy!
