Delicious Carrot Cake Oatmeal Cookies

These carrot cake oatmeal cookies combine the best of both worlds! Soft, chewy oatmeal cookies are infused with the warm spices and flavors of carrot cake for a delicious and satisfying treat.

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 cup shredded carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in rolled oats, shredded carrots, nuts (if using), and raisins (if using).
  7. Drop by rounded tablespoons onto the prepared baking sheets.
  8. Bake for 10-12 minutes, or until golden brown around the edges.
  9. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For a cream cheese frosting drizzle, whisk together cream cheese, powdered sugar, and milk until smooth. Drizzle over cooled cookies.
