Cheddar Zucchini Scones on a Wooden Board

These savory Cheddar Zucchini Scones are packed with flavor and are incredibly moist. Perfect for breakfast, brunch, or a quick afternoon snack, they’re a delicious way to use up extra zucchini!

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 tablespoons cold unsalted butter, cubed
  • 1 cup shredded zucchini, squeezed dry
  • 1 cup shredded sharp cheddar cheese
  • 3/4 cup buttermilk
  • 1 large egg, lightly beaten, for brushing

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pepper.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the shredded zucchini and cheddar cheese.
  5. Add the buttermilk and mix until just combined. Do not overmix.
  6. Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick circle.
  7. Use a sharp knife or a biscuit cutter to cut the dough into 8 wedges or rounds.
  8. Place the scones onto the prepared baking sheet.
  9. Brush the tops with the beaten egg.
  10. Bake for 18-20 minutes, or until golden brown.
  11. Let cool on the baking sheet for a few minutes before serving.

Notes

Serve warm with a dollop of butter or cream cheese for an extra treat. You can also add a pinch of red pepper flakes for a little heat.
