This Cheeseburger Soup is a hearty and comforting meal that brings all the delicious flavors of a classic cheeseburger into a warm, creamy soup. It’s easy to make and perfect for a quick weeknight dinner.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • Optional toppings: cooked bacon crumbles, sliced green onions, sour cream

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
  3. Pour in the beef broth and diced tomatoes. Stir in the Worcestershire sauce, garlic powder, and black pepper.
  4. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, allowing the flavors to meld.
  5. Stir in the softened cream cheese until it is completely melted and incorporated into the soup.
  6. Remove from heat and stir in the shredded cheddar cheese until melted.
  7. Serve hot, topped with your favorite cheeseburger toppings, such as cooked bacon crumbles, sliced green onions, or a dollop of sour cream.

Notes

For a smoother soup, use an immersion blender to partially blend the soup before adding the cheddar cheese. You can also substitute ground turkey or chicken for the ground beef.
