Cheesy Corn Ribs

Cheesy Corn Ribs are crispy, flavorful corn on the cob slices coated with melted cheese and spices, perfect as a snack or side dish.

  • 2 large ears of corn, husked
  • 1 cup shredded cheddar cheese
  • 2 tablespoons mayonnaise
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 tablespoon chopped fresh cilantro (optional)
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice each ear of corn into 4–5 long strips lengthwise to create “ribs.”
  3. In a small bowl, mix mayonnaise, smoked paprika, garlic powder, chili powder, salt, and pepper until well combined.
  4. Brush each corn rib evenly with the spiced mayonnaise mixture.
  5. Sprinkle shredded cheddar cheese generously over each corn rib.
  6. Place the corn ribs on the baking sheet and bake for 12–15 minutes, or until cheese is melted and edges are slightly crispy.
  7. Garnish with chopped cilantro and serve immediately with lime wedges on the side.

Notes

For an extra kick, sprinkle some cayenne pepper or drizzle with hot sauce before serving.
