Cheesy Funeral Potatoes are a classic comforting casserole featuring crispy hash browns baked in a creamy cheese sauce, perfect as a hearty side dish for any gathering.

  • 6 cups frozen shredded hash browns, thawed
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1/2 cup chopped green onions
  • 2 cups crushed cornflakes
  • 2 tablespoons melted butter (for topping)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine thawed hash browns, shredded cheddar cheese, cream of chicken soup, sour cream, melted butter, and chopped green onions. Season with salt and pepper and mix well.
  3. Spread the potato mixture evenly in the prepared baking dish.
  4. In a small bowl, mix crushed cornflakes with 2 tablespoons melted butter until evenly coated.
  5. Sprinkle the cornflake mixture evenly over the potato mixture.
  6. Bake in the preheated oven for 45-50 minutes, or until the casserole is bubbly and the topping is golden brown.
  7. Remove from oven and let cool slightly before serving.

Notes

For extra flavor, stir in cooked and crumbled bacon or use sharp white cheddar cheese. Serve with a fresh green salad for a complete meal.
