  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 4 medium potatoes, peeled and cubed
  • 1 cup milk
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: chopped green onions for garnish

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and diced tomatoes. Bring to a boil.
  4. Add the cubed potatoes, salt, and pepper. Reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  5. Stir in the milk and cream cheese until the cream cheese is melted and the soup is smooth.
  6. Remove from heat and stir in the shredded cheddar cheese until melted.
  7. Serve hot, garnished with chopped green onions if desired.

Notes

For a spicier soup, add a pinch of red pepper flakes or a dash of hot sauce. You can also top with a dollop of sour cream.
