  • 4 cups peeled and cubed potatoes
  • 4 cups chicken broth
  • 1 cup chopped onion
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine potatoes, chicken broth, and onion. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  2. While potatoes are cooking, melt butter in a separate saucepan over medium heat. Whisk in flour until smooth. Gradually whisk in milk until smooth and thickened.
  3. Stir cheese into the milk mixture until melted and smooth.
  4. Pour cheese sauce into the potato mixture. Stir well to combine.
  5. Stir in sour cream. Season with salt and pepper to taste.
