Warm and Comforting Cheesy Scalloped Potatoes

This cheesy scalloped potatoes recipe is the ultimate comfort food! Thinly sliced potatoes are baked in a creamy cheese sauce until golden and bubbly.

  • 2 pounds Yukon Gold potatoes, peeled and thinly sliced
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  3. Reduce heat and simmer for 2-3 minutes, or until sauce has thickened slightly.
  4. Remove from heat and stir in salt, pepper, garlic powder, and 1 1/2 cups of cheddar cheese until melted.
  5. Layer half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the potatoes.
  6. Repeat layers with remaining potatoes and cheese sauce.
  7. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  8. Bake for 50-60 minutes, or until potatoes are tender and the top is golden brown. Let stand for 10 minutes before serving.

Notes

For an extra crispy top, broil for the last 2-3 minutes, watching carefully to prevent burning. You can also add ham or bacon for a heartier dish.
