  • 4 boneless, skinless chicken breasts
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized, about 20-25 minutes. Season with salt and pepper.
  3. While onions are caramelizing, prepare the chicken. Place each chicken breast between two sheets of plastic wrap and pound to 1/4-inch thickness.
  4. In a bowl, combine cream cheese, mozzarella cheese, Parmesan cheese, parsley, and garlic powder. Season with salt and pepper.
  5. Spread about 2 tablespoons of the cheese mixture over each chicken breast. Top with caramelized onions.
  6. Roll up each chicken breast tightly and secure with toothpicks.
  7. Place the chicken rolls in a baking dish and bake for 25-30 minutes, or until chicken is cooked through and the cheese is melted and bubbly.
  8. Remove toothpicks before serving.
