Delight in these Cherry Blossom Cookies, featuring a tender, buttery base infused with floral cherry notes and a sweet cherry center, perfect for springtime treats or festive gatherings.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 10-12 maraschino cherries, halved and patted dry
  • Pink and white pearl sugar or sanding sugar, for decorating
  • 1 tbsp milk (optional, for brushing)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet, mixing until a soft dough forms.
  6. Roll the dough into tablespoon-sized balls and place them on the prepared baking sheet about 2 inches apart.
  7. Gently press a cherry half into the center of each dough ball.
  8. Optionally, brush the cookies lightly with milk and sprinkle the pearl sugar over the tops for a festive touch.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra cherry flavor, chill the dough for 30 minutes before shaping. These cookies pair beautifully with green tea or a light floral tea.
