This classic Chicken and Dumpling Soup is the ultimate comfort food. Tender chicken and fluffy dumplings simmered in a rich, savory broth make for a hearty and satisfying meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • 2 tablespoons butter, melted
  • 1/4 cup chopped fresh parsley, for garnish
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth, add thyme, rosemary, and bay leaf. Bring to a simmer.
  3. Add chicken pieces to the pot and simmer for 15-20 minutes, or until chicken is cooked through.
  4. While the chicken is cooking, prepare the dumplings. In a medium bowl, whisk together flour, baking powder, and salt.
  5. In a separate bowl, combine milk and melted butter. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  6. Drop spoonfuls of dumpling batter into the simmering soup. Cover the pot and simmer for 15-20 minutes, or until dumplings are cooked through.
  7. Remove bay leaf before serving. Garnish with fresh parsley and season with salt and pepper to taste.
  8. Serve hot and enjoy!

Notes

For extra flavor, add a pinch of red pepper flakes to the soup. You can also substitute the chicken breasts with leftover cooked chicken or rotisserie chicken.
