Chicken and Potatoes Dijon Sauce recipe

This Chicken and Potatoes Dijon Sauce recipe is a delicious, easy-to-make meal featuring tender chicken and crispy potatoes coated in a tangy Dijon mustard sauce.

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the halved baby potatoes with 1 tablespoon olive oil, salt, pepper, and dried thyme. Spread on a baking sheet and roast for 25 minutes until golden and tender.
  3. While the potatoes roast, heat the remaining olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper.
  4. Sear the chicken breasts for 4-5 minutes on each side until browned but not fully cooked. Remove and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  6. Add the Dijon mustard and chicken broth, stirring to combine. Let it simmer for 2-3 minutes.
  7. Stir in the heavy cream and cook until the sauce slightly thickens, about 3 minutes.
  8. Return the chicken breasts to the skillet, spoon sauce over them, and cook for another 5-7 minutes until the chicken is fully cooked through.
  9. Serve the chicken topped with sauce alongside the roasted potatoes. Garnish with chopped fresh parsley.

Notes

For extra flavor, add a splash of white wine to the sauce or serve with a green salad for a complete meal.
