Chicken and Spinach Casserole

A comforting and healthy baked casserole featuring tender chicken and fresh spinach layered in a creamy, cheesy sauce, perfect for a hearty weeknight dinner.

  • 2 cups cooked chicken, shredded
  • 4 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent.
  3. Add chopped spinach to the skillet and cook until wilted, then remove from heat.
  4. In a large bowl, combine cream cheese, sour cream, and milk until smooth.
  5. Stir in cooked chicken, sautéed spinach mixture, half of the cheddar cheese, Parmesan cheese, salt, and pepper.
  6. Transfer mixture into a greased casserole dish and top with the remaining cheddar cheese.
  7. Bake uncovered for 25 to 30 minutes until bubbly and golden on top.
  8. Allow to cool slightly before serving.

Notes

For extra flavor, sprinkle with crushed red pepper flakes or serve with a side of garlic bread.
