Delicious Bowl of Chicken Corn Chowder

Warm up with this creamy and comforting Chicken Corn Chowder, packed with tender chicken, sweet corn, and flavorful seasonings. A perfect hearty meal for chilly evenings!

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups frozen corn
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Pour in chicken broth and bring to a simmer. Add chicken, thyme, salt, and pepper. Simmer for 15-20 minutes, or until chicken is cooked through.
  3. Stir in frozen corn and cook for another 5 minutes.
  4. In a small bowl, whisk together heavy cream, flour, and water until smooth. Pour the mixture into the pot and stir until the chowder thickens, about 2-3 minutes.
  5. Remove from heat and garnish with fresh parsley. Serve hot.

Notes

For a thicker chowder, use an immersion blender to partially blend before adding the cream mixture. Garnish with crispy bacon bits for added flavor!
