Chicken Fajita Rice is a flavorful and colorful one-pan meal combining tender chicken, bell peppers, and seasoned rice, perfect for a quick and satisfying dinner.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon fajita seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken and season with fajita seasoning, smoked paprika, salt, and pepper. Cook until chicken is browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, add onion and bell peppers. Sauté until tender, about 4-5 minutes. Add minced garlic and cook for another minute.
  4. Add rice to the skillet and stir to combine with vegetables. Pour in chicken broth and bring to a simmer.
  5. Reduce heat to low, cover, and cook for 15-18 minutes until rice is tender and liquid is absorbed.
  6. Return the cooked chicken to the skillet and stir to mix everything evenly. Cook for an additional 2 minutes to heat through.
  7. Garnish with chopped cilantro and serve with lime wedges on the side.

Notes

For extra flavor, add a dash of hot sauce or sprinkle shredded cheese on top just before serving.
