Delicious Chicken Fried Rice

This classic Chicken Fried Rice is a quick and easy one-pan meal perfect for weeknights. It’s packed with savory flavors and customizable with your favorite vegetables.

  • 1 pound boneless, skinless chicken breasts, cut into small cubes
  • 2 tablespoons soy sauce, divided
  • 1 tablespoon sesame oil, divided
  • 2 cups cooked rice, preferably day-old
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 egg, lightly beaten
  • 2 green onions, thinly sliced
  • Salt and pepper to taste

Instructions

  1. In a bowl, marinate the chicken with 1 tablespoon of soy sauce and 1/2 tablespoon of sesame oil. Let it sit for 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Add the remaining 1/2 tablespoon of sesame oil to the skillet. Add the chopped onion and garlic and cook until softened, about 2-3 minutes.
  4. Push the onion and garlic to one side of the skillet. Pour the beaten egg into the empty space and cook, scrambling until set.
  5. Add the mixed vegetables and cooked rice to the skillet. Stir-fry for 2-3 minutes until heated through.
  6. Return the cooked chicken to the skillet. Add the remaining 1 tablespoon of soy sauce and stir-fry everything together until well combined.
  7. Season with salt and pepper to taste.
  8. Garnish with green onions before serving.

Notes

For extra flavor, add a dash of sriracha or chili garlic sauce. You can also use leftover rotisserie chicken to save time.
