This classic Chicken Noodle Soup is the ultimate comfort food. Packed with tender chicken, egg noodles, and vegetables in a flavorful broth, it’s perfect for a chilly day or when you’re feeling under the weather.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 8 ounces egg noodles
  • 1/4 cup chopped fresh parsley
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth, then add chicken breasts, thyme, rosemary, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
  4. Remove chicken from the pot and shred with two forks. Return shredded chicken to the pot.
  5. Add egg noodles and cook according to package directions, usually about 8-10 minutes.
  6. Stir in parsley and salt to taste.
  7. Serve hot.

Notes

For a richer flavor, use homemade chicken broth. You can also add other vegetables, such as peas or corn.
