Chicken with Boursin Sauce

This Chicken with Boursin Sauce is a creamy and flavorful dish perfect for a weeknight dinner. Tender chicken breasts are pan-seared and smothered in a rich, herby Boursin cheese sauce.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 ounces Boursin cheese, softened
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts to the skillet and cook for 5-7 minutes per side, or until cooked through. Remove chicken from skillet and set aside.
  4. Reduce heat to medium. Add Boursin cheese, chicken broth, and heavy cream to the skillet.
  5. Whisk until the cheese is melted and the sauce is smooth.
  6. Stir in parsley and thyme.
  7. Return chicken breasts to the skillet and spoon sauce over the top.
  8. Simmer for 2-3 minutes, or until chicken is heated through.
  9. Serve immediately.

Notes

Serve with a side of pasta or rice for a complete meal. For extra flavor, add a squeeze of lemon juice to the sauce before serving.
