Chocolate Mint Brownies

Indulge in rich, fudgy chocolate brownies infused with refreshing mint flavor, perfect for a decadent dessert or snack.

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon peppermint extract
  • 1/2 cup semi-sweet chocolate chips
  • Optional: crushed peppermint candies for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan.
  2. Melt the butter in a medium saucepan over low heat.
  3. Remove from heat and stir in sugar, eggs, and vanilla extract.
  4. Beat in cocoa, flour, salt, and baking powder until well blended.
  5. Stir in peppermint extract and chocolate chips.
  6. Pour batter into prepared pan, smoothing the top.
  7. Bake for 20-25 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  8. Cool completely before slicing. Optionally, sprinkle crushed peppermint candies on top before serving.

Notes

For an extra minty kick, frost the brownies with a light layer of mint buttercream or add a dollop of whipped cream on the side.
