Chocolate Mint Brownies

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon peppermint extract
  • 1/2 cup mint chocolate chips or chopped mint chocolate candies
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. Melt the butter in a medium saucepan over low heat.
  3. Remove from heat and stir in sugar, eggs, and vanilla extract until well combined.
  4. Beat in cocoa powder, flour, salt, and baking powder.
  5. Stir in peppermint extract and mint chocolate chips.
  6. Pour batter into the prepared pan, spreading evenly.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow brownies to cool completely in the pan before cutting into squares.
  9. Optional: Dust with powdered sugar before serving for an elegant touch.
