  • 1 1/2 cups chocolate cookie crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • For the Filling:
  • 24 ounces cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon orange extract
  • Zest of 1 large orange
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup cocoa powder
  • For the Ganache Topping (Optional):
  • 4 ounces semi-sweet chocolate, chopped
  • 1/4 cup heavy cream
  • Orange slices, for garnish

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar. Press mixture firmly into the bottom of a 9-inch springform pan.
  2. Bake the Crust: Bake for 8-10 minutes, or until set. Let cool slightly.
  3. Make the Filling: In a large bowl, beat cream cheese and sugar until smooth and creamy. Beat in vanilla extract and orange extract. Mix in orange zest.
  4. Add Eggs: Beat in eggs one at a time, mixing well after each addition. Stir in sour cream and cocoa powder until combined.
  5. Pour and Bake: Pour filling over the cooled crust. Bake for 55-65 minutes, or until the edges are set but the center still jiggles slightly.
  6. Cooling Process: Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour. This helps prevent cracking.
  7. Chill: Remove from the oven and let cool completely on a wire rack. Cover and refrigerate for at least 4 hours, or preferably overnight.
  8. Prepare Ganache (Optional): Place chopped chocolate in a heatproof bowl. Heat heavy cream in a saucepan until simmering. Pour hot cream over the chocolate and let sit for 1 minute. Whisk until smooth and glossy.
  9. Garnish: Pour ganache over the chilled cheesecake (optional). Garnish with orange slices.
  10. Serve: Carefully remove the cheesecake from the springform pan. Slice and serve.

Notes

For a smoother ganache, add a tablespoon of butter along with the heavy cream. Serve chilled for best results.
