  • 1 1/2 cups chocolate cookie crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • For the Peanut Butter Filling:
  • 8 ounces cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • For the Chocolate Ganache:
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Make the Crust: In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch pie plate.
  2. Make the Filling: In a large bowl, beat cream cheese and peanut butter until smooth. Gradually add powdered sugar and vanilla extract, beating until combined. Slowly add milk until smooth and creamy.
  3. Assemble the Pie: Pour the peanut butter filling into the prepared crust. Refrigerate for at least 2 hours.
  4. Make the Ganache: Place chocolate chips in a heatproof bowl. Heat heavy cream in a saucepan until simmering. Pour the hot cream over the chocolate chips and let sit for 1 minute. Whisk until smooth.
  5. Finish the Pie: Pour the chocolate ganache over the peanut butter filling. Refrigerate for at least 30 minutes before serving.

For an extra touch, sprinkle chopped peanuts on top of the chocolate ganache before it sets.
