This moist and decadent Chocolate Zucchini Bread is a delicious way to sneak in some extra veggies! With rich chocolate flavor and a tender crumb, it’s perfect for breakfast, snack, or dessert.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini, excess moisture squeezed out
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together sugar, oil, eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the shredded zucchini and chocolate chips.
  6. Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For an extra touch, sprinkle the top of the bread with chocolate chips before baking. You can also add 1/2 cup of chopped nuts to the batter for added texture.
