Delicious Chorizo Tacos Ready to Eat

These flavorful chorizo tacos are quick, easy, and packed with smoky, spicy goodness. Perfect for a weeknight dinner or a fun weekend gathering!

  • 1 pound Mexican chorizo, removed from casings
  • 1 tablespoon olive oil
  • 1/2 white onion, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 12 corn or flour tortillas
  • Optional toppings: shredded cheese, sour cream, salsa, avocado

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chorizo and cook, breaking it up with a spoon, until browned and cooked through.
  2. Add the chopped onion and jalapeño (if using) to the skillet. Cook until the onion is softened, about 5 minutes.
  3. Stir in the chili powder, cumin, and smoked paprika. Cook for 1 minute more, until fragrant.
  4. Stir in the cilantro and lime juice.
  5. Warm the tortillas according to package directions.
  6. Fill each tortilla with the chorizo mixture.
  7. Top with your favorite toppings and serve immediately.

Notes

For extra flavor, try grilling the tortillas before filling them. You can also add a dollop of refried beans to each taco.
