  • 6 large eggs
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 4 cups cubed day-old bread
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped onion
  • 2 green onions, sliced (optional garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, and Italian seasoning.
  3. Layer half of the bread cubes evenly in the prepared baking dish.
  4. Sprinkle half of the cooked sausage, chopped bell pepper, onion, and shredded cheese over the bread.
  5. Repeat layers with remaining bread, sausage, vegetables, and cheese.
  6. Pour the egg mixture evenly over the casserole.
  7. Press down gently to ensure bread absorbs the egg mixture.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake an additional 15-20 minutes until casserole is set and top is golden brown.
  10. Let stand for 5 minutes before serving. Garnish with sliced green onions if desired.

Notes

For added flavor, try adding cooked and crumbled bacon or using a mix of Swiss and cheddar cheese. Serve with fresh fruit and hot coffee for a complete holiday brunch.
