  • 1 cup cooked quinoa
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped pecans
  • 1/4 cup pomegranate seeds
  • For the Honey Mustard Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a small bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, salt, and pepper until well combined.
  2. In a large bowl, combine mixed greens, cooked quinoa, dried cranberries, goat cheese, and pecans.
  3. Pour honey mustard dressing over the salad and toss gently to coat.
  4. Sprinkle with pomegranate seeds.
  5. Serve immediately.

For a vegan option, substitute the goat cheese with vegan feta and the honey in the dressing with maple syrup.
