Warm Cinnamon Roll Protein Crepes

Ingredients

  • 1/2 cup protein pancake mix
  • 1/4 cup milk (dairy or non-dairy)
  • 1/4 cup egg whites
  • 1/4 teaspoon cinnamon
  • 1 tablespoon sweetener of choice (erythritol, stevia, etc.)
  • 1/4 teaspoon vanilla extract
  • For the Filling:
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon butter, softened
  • 2 tablespoons sweetener of choice
  • 1/2 teaspoon cinnamon
  • For the Glaze:
  • 2 tablespoons powdered sweetener (erythritol, stevia, etc.)
  • 1-2 tablespoons milk (dairy or non-dairy)

Instructions

  1. In a bowl, whisk together the protein pancake mix, milk, egg whites, cinnamon, sweetener, and vanilla extract until smooth.
  2. Heat a lightly oiled crepe pan or non-stick skillet over medium heat.
  3. Pour about 1/4 cup of batter onto the hot pan and swirl to create a thin, even crepe.
  4. Cook for 1-2 minutes per side, or until golden brown. Repeat with remaining batter.
  5. While the crepes are cooking, prepare the filling. In a small bowl, beat together the softened cream cheese, butter, sweetener, and cinnamon until smooth and creamy.
  6. Once the crepes are cooked, spread a thin layer of the cream cheese filling over each crepe.
  7. Roll up the crepes tightly.
  8. In a small bowl, whisk together the powdered sweetener and milk to create the glaze. Add more milk for a thinner glaze.
  9. Drizzle the glaze over the rolled crepes. Serve immediately.

Notes

For extra flavor, sprinkle a few chopped nuts (like pecans or walnuts) over the glaze.
